Recipe: Crispy Kale nom nom nom

IMG_2560In the waning days of still-harvestable-kale, I bring you a favorite family recipe: Crispy Kale with Pine Nuts and Goat Cheese (though truly, you could leave out the cheese, try another, or throw on any sweet or savory thing you have available).  This recipe lives in that perfect venn diagram of crowd-pleasing foods: easy to make, healthy to eat, and tastes deliciously of popcorn.

Crispy Kale with Goat Cheese and Pine Nuts

    1. Preheat oven to 410
    2.  Wash and de-stem a large bunch of kale
    3.  Toss with olive oil, salt and pepper
    4. Lay kale flat on a baking sheet, spread generous amounts of pine nuts and goat cheese on top
    5.  Let cook for 10-12 minutes, or until kale looks crispy and cheese is melted.
    6.  Enjoy!

(Warning - this dish often disappears straight out of the oven; watch for nibblers :)
